Ingredients

4 servings
Cluster beans (guar beans)400 g, tips removed, in pieces
Cooking oil (vegetable oil)2 tbsp
Ajwain (carom seeds)½ tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Garlic4 cloves, chopped
Green chilli1
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)2 tsp
Dry mango powder1 tsp
Besan (chickpea flour, gram flour)1 tbsp, optional
Saltto taste

Method

4 steps
  1. 1Boil the cluster beans in salted water for 5 minutes and drain.
  2. 2Heat oil, add ajwain, cumin, asafoetida, garlic and green chilli.
  3. 3Add the beans and powders, cook uncovered on medium, stirring, until tender and dry. Sprinkle besan and toss for 2 minutes.
  4. 4Finish with amchur.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
