Carrot2, cut into sticks
Cauliflower1 small head, florets
Turnip2, sliced
Mustard oil½ cup
Ginger garlic paste2 tbsp
Jaggery½ cup
Vinegar¼ cup
Mustard seeds2 tbsp, coarsely ground
Red chilli powder (indian red chili powder)1 tbsp
Garam masala2 tsp

- 1Blanch the vegetables in boiling water for 1 minute, drain and spread on a cloth to dry in the sun or a dry room for a few hours.
- 2Heat mustard oil to smoking, cool slightly and fry the ginger garlic paste until golden.
- 3Add the vegetables, mustard, chilli, garam masala and salt. Toss and turn off heat.
- 4Melt jaggery with vinegar, pour over and mix. Fill jars and keep in the sun for 4 to 5 days.
Serve it like thisServe hot on a plate, with a few fresh coriander leaves on top.
