Ingredients

3 servings
Chicken, bonelessboneless, bite size pieces
Cornflour (cornstarch)1 tbsp
Cashews½ cup
Dried red chilli6 whole, cut in 2 cm pieces
Onion1, in petals
Capsicum (green capsicum, green bell pepper)1, in squares
Spring onion (green onion, scallion)2, in lengths
Garlic4 cloves
Oyster sauce1½ tbsp
Soy sauce2 tsp
Red chilli sauce1 tbsp chilli jam or chilli sauce
Jaggery1 tsp
Water3 tbsp
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Toss chicken with cornflour. Fry cashews and dried chillies in the oil until golden, then lift out.
  2. 2Sear chicken in the same oil until golden and cooked through with no pink.
  3. 3Add garlic, onion and capsicum and toss for a minute.
  4. 4Add sauces, sugar and water and toss until glossy. Return the cashews and chillies with the spring onion.
Serve it like this

Mound on a warm plate, scatter the whole fried chillies and cashews on top so they show. Serve with jasmine rice.
