Classic fiskekaker.

Ingredients

4 servings
Fish600 g haddock or cod fillet, skinless
Salt1¼ tsp
Cornflour (cornstarch)2 tbsp potato starch or cornflour
Nutmega good pinch
White pepper¼ tsp
Egg1
Milk⅔ cup, cold
Onion½ small, grated
Butter2 tbsp, for frying
Potatoboiled, to serve

Method

5 steps
  1. 1Blitz the fish with the salt until it turns into a sticky paste.
  2. 2Add starch, nutmeg, pepper, egg and onion. Pulse while pouring in the cold milk in a slow stream.
  3. 3Shape flat cakes with a wet spoon.
  4. 4Fry in butter over medium heat, 3 to 4 minutes per side.
  5. 5Serve with potatoes, grated raw carrot and melted butter.
Serve it like this

Overlap three cakes on a warm plate with boiled potatoes, grated raw carrot and a spoon of melted butter or white sauce.
