Ingredients

8 servings
Potato4 large
Cooking oil (vegetable oil)groundnut oil, for frying
Peanuts½ cup
Cashewsa handful
Raisins2 tbsp
Black pepper½ tsp
Red chilli powder (indian red chili powder)1 tsp, if your fast allows
Sugar2 tsp, powdered
Rock salt (sendha namak)to taste

Method

4 steps
  1. 1Grate potatoes into long shreds. Rinse in cold water till it runs clear, then dry completely on a towel.
  2. 2Fry in hot oil in small batches till crisp and golden.
  3. 3Fry peanuts, cashews and raisins in the same oil.
  4. 4Toss everything with pepper, chilli, sugar and rock salt. Cool and store airtight.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
