Ingredients

4 servings
Idli dosa batter4 cups
Egg8 eggs
Onion1 medium, finely chopped
Green chilli1 or 2, finely chopped
Black pepper1 tsp, crushed
Coriander leaves (cilantro)a handful, chopped
Curry leavesa few, chopped
Cooking oil (vegetable oil)about 2 1/2 tbsp

Method

5 steps
  1. 1Spread a ladle of batter on a hot tawa into a medium thick dosa.
  2. 2Crack 2 eggs straight onto the dosa, or beat them first with salt and pepper, and spread them over the top.
  3. 3Scatter onion, chilli, curry leaves, coriander and a pinch of pepper. Drizzle oil around the edges.
  4. 4Flip and cook the egg side till lightly browned, then flip back.
  5. 5Fold and serve with chicken or mutton salna, or plain tomato chutney.
Serve it like this

Serve straight off the tawa, folded, with chutney and sambar in small bowls on the side.
