Ingredients

4 servings
Raw jackfruit (young green jackfruit)600 g, peeled and cubed
Potato2 medium, cubed
Turmeric (ground turmeric)1 tsp
Saltto taste
Mustard oil3 tbsp
Bay leaf (indian bay leaf)2
Whole spices2 cardamom, 2 cloves, small cinnamon
Cumin seeds½ tsp
Ginger5 cm, ground
Tomato1 large, pureed
Kashmiri chilli powder1½ tsp
Cumin powder (ground cumin)1½ tsp
Coriander powder (ground coriander)1 tsp
Sugar1 tsp
Water1¼ cups
Ghee2 tsp
Garam masala½ tsp

Method

5 steps
  1. 1Oil your hands and knife, then cube the jackfruit. Pressure cook with turmeric, salt and a little water for 2 whistles. Release naturally and drain.
  2. 2Fry the jackfruit and potatoes in mustard oil until golden at the edges. Lift out.
  3. 3In the same oil add bay leaves, whole spices and cumin. Add ginger, tomato and the powdered spices with a splash of water. Cook until oil separates.
  4. 4Add the jackfruit, potatoes, sugar and water. Cover and simmer until potatoes are soft and the gravy thickens.
  5. 5Finish with ghee and garam masala. Serve with rice or luchi.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
