Ingredients

3 servings
Egg3, room temperature
Maida (all-purpose flour, plain flour)⅔ cup
Milk¾ cup, room temperature
Sugar2 tbsp, part for dusting
Butter3 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch
Lemon juice1 tbsp
Strawberriesto serve

Method

4 steps
  1. 1Heat the oven to 220 C with a 25 cm cast iron or ovenproof pan inside.
  2. 2Blend eggs, flour, milk, 1 tbsp sugar, vanilla and salt until smooth and frothy.
  3. 3Add the butter to the hot pan, swirl until melted, pour in the batter and bake 18 to 20 minutes without opening the door.
  4. 4Squeeze lemon over, dust with sugar and top with strawberries. Serve at once.
Serve it like this

Bring the pan straight to the table on a board while still puffed, lemon wedges and berries on top. Cut into wedges.
