Ingredients: 2 cups long grain rice; 1 cup dried djon djon (or dried shiitake) djon djon mushrooms, dried; 1 litre water; 1 cup peas or lima beans green peas; 4 cloves garlic; 3 spring onion (green onion, scallion); a handful flat leaf parsley; 1 whole scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli); 4 cloves whole spices; 1/2 tsp dried thyme; 2 tbsp or butter cooking oil (vegetable oil); 1 stock cube stock cube (bouillon cube); Salt, to taste

Rice2 cups long grain

Djon djon mushrooms, dried1 cup dried djon djon (or dried shiitake)

Water1 litre

Green peas1 cup peas or lima beans

Garlic4 cloves

Spring onion (green onion, scallion)3

Flat leaf parsleya handful

Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 whole

Whole spices4 cloves

Dried thyme½ tsp

Cooking oil (vegetable oil)2 tbsp, or butter

Stock cube (bouillon cube)1 stock cube

Method

4 steps

1Simmer the djon djon in the water for 15 minutes, then strain, pressing on the mushrooms. Keep the black liquid.
2Pound garlic, spring onion and parsley into epis and fry in the oil with cloves and thyme.
3Add the rice and stir to coat, then add the peas, mushroom liquid, stock cube, salt and the whole chilli.
4Boil until the liquid sinks to the level of the rice, then cover and cook on very low heat for 20 minutes. Remove the chilli.

Serve it like this

Mound the black rice on a platter with peas showing and serve beside griot, fried plantains and pikliz.
