Ingredients

4 servings
Potato3 large potatoes
Watercold, for rinsing
Maida (all-purpose flour, plain flour)¼ cup
Cornflour (cornstarch)1½ tbsp
Paprika1½ tsp
Onion powder1 tsp
Garlic powder½ tsp
Red chilli powder (indian red chili powder)½ tsp
Salt1 tsp
Cooking oil (vegetable oil)about 1 litre for deep frying, about 4 tbsp absorbed

Method

6 steps
  1. 1Spiralise the potatoes on the thickest spiral blade and cut the spirals into 10 cm lengths.
  2. 2Rinse in cold water until clear and drain, leaving the spirals just damp.
  3. 3Mix the maida, cornflour, paprika, onion powder, garlic powder, chilli and salt. Toss the spirals in it, shaking off the excess.
  4. 4Heat the oil in a heavy kadai, no more than half full, to 175°C.
  5. 5Fry a small handful at a time for 4 to 5 minutes, turning gently. Keep children back and never leave the oil.
  6. 6Drain on a rack and sprinkle with a little salt. Serve hot.
Serve it like this
