Ingredients

Pork belly450 g, in strips
Cooking oil (vegetable oil)1 tsp
Garlic6 cloves, minced
Onion1, chopped
Gingera thumb, minced
Shrimp paste2 tbsp bagoong alamang
Thin coconut milk1⅔ cups
Thick coconut milk¾ cup coconut cream
Green chillilong green chillies (siling haba), sliced
Fresh red chillies (fresh red chiles)bird's eye chillies, sliced

Method

4 steps
  1. 1Render the pork in the oil over medium heat for 10 minutes until lightly browned.
  2. 2Add the garlic, onion and ginger and cook 2 minutes, then the shrimp paste for 2 minutes.
  3. 3Add the thin coconut milk and simmer 25 minutes until the pork is tender.
  4. 4Add the chillies and coconut cream and cook 10 minutes until thick and the oil separates.
Serve it like this

Serve in a bowl with plenty of steamed rice and something cooling, like cucumber or an ice cold calamansi juice.
