Classic bhuna gosht.

Ingredients

4 servings
Mutton (goat meat)750 g, curry cut
Curd (plain yogurt, natural yoghurt)½ cup
Cooking oil (vegetable oil)3½ tbsp
Whole spicesbay leaf, black cardamom, cloves, cinnamon
Onion3 medium, finely chopped
Ginger garlic paste2½ tbsp
Tomato2 medium, chopped
Red chilli powder (indian red chili powder)1½ tsp
Kashmiri chilli powder1 tsp
Coriander powder (ground coriander)1 tbsp
Turmeric (ground turmeric)½ tsp
Garam masala1½ tsp
Saltto taste
Water¾ cup
Coriander leaves (cilantro)chopped
Gingerjulienned

Method

5 steps
  1. 1Marinate the mutton with curd, ginger garlic paste, turmeric and salt for 1 hour.
  2. 2Heat oil in a cooker, crackle whole spices and fry the onions until dark brown.
  3. 3Add the mutton and bhuno on high, stirring, until the meat browns and the curd dries out. Add tomatoes and powders and continue until oil separates.
  4. 4Add water and pressure cook 5 whistles. Let pressure release naturally.
  5. 5Cook open on high, stirring, until all liquid is gone and the masala coats the meat. Finish with garam masala, ginger and coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
