Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups
Milk1⅔ cups, warm
Butter7 tbsp, melted
Egg3, separated
Instant dry yeast2 tsp
Sugar2 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salt½ tsp
Strawberriesto serve
Maple syrupto serve

Method

5 steps
  1. 1Whisk flour, yeast, sugar and salt. Add warm milk, melted butter, yolks and vanilla and whisk smooth.
  2. 2Cover and rest 1 hour at room temperature, or overnight in the fridge.
  3. 3Whisk the whites to soft peaks and fold into the batter.
  4. 4Cook in a hot, greased Belgian waffle iron until deep golden, about 4 to 5 minutes each.
  5. 5Serve at once with strawberries and syrup.
Serve it like this

Serve hot on warm plates, dusted with sugar, piled with strawberries and a jug of syrup. Whipped cream if it is a celebration.
