Lobia, dry (dried black eyed peas)1 cup dry, soaked
Rice1¼ cups
Bacon (streaky rashers, streaky bacon)6 rashers, diced
Chorizolinguiça or chorizo, sliced
Halloumi200 g queijo coalho or halloumi, cubed

Garlic3 cloves
Coriander leaves (cilantro)a handful
Butter1½ tbsp (manteiga de garrafa)

- 1Cook the beans until just tender, about 30 minutes, keeping their water.
- 2Fry the bacon and sausage, then the onion and garlic.
- 3Add the rice, beans and 2 cups of bean water. Cover and cook 18 minutes.
- 4Sear the cheese cubes until golden and fold in with butter and coriander.
