Ingredients

4 servings
Rice1 cup
Toor dal (split pigeon peas)⅓ cup
Shallots10, sliced
Tomato1 medium, chopped
Garlic4 cloves
Green chilli2, slit
Sambar powder1 tbsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)1 tbsp
Ghee1 tbsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Curry leaves2 sprigs
Water4½ cups
Coriander leaves (cilantro)a handful
Saltto taste

Method

5 steps
  1. 1Wash rice and dal together and soak 15 minutes.
  2. 2Heat oil and ghee in a cooker. Splutter mustard and cumin, add curry leaves, shallots, garlic and green chillies. Saute until soft.
  3. 3Add tomato, turmeric and sambar powder; cook until mushy.
  4. 4Add drained rice and dal, water and salt. Pressure cook 4 whistles and let it rest.
  5. 5Stir gently, top with ghee and coriander.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
