Classic aloo gosht.

Ingredients

Mutton (goat meat)600 g, curry cut
Potato3 medium, halved
Cooking oil (vegetable oil)3 tbsp
Whole spicesbay leaf, cardamom, cloves, cinnamon
Onion2 large, sliced
Ginger garlic paste2 tbsp
Tomato2 medium, chopped
Curd (plain yogurt, natural yoghurt)⅓ cup
Red chilli powder (indian red chili powder)1¼ tsp
Coriander powder (ground coriander)2 tsp
Turmeric (ground turmeric)½ tsp
Garam masala1 tsp
Saltto taste
Water2½ cups
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Heat oil in a pressure cooker, crackle whole spices and fry onions until golden brown.
  2. 2Add ginger garlic paste and mutton. Bhuno on high for 10 minutes, then add tomato, curd and powders and cook until oil separates.
  3. 3Add water and pressure cook 4 whistles. Release pressure, add the potatoes and cook 2 more whistles. Let pressure release naturally.
  4. 4Simmer open 5 minutes, add garam masala and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
